My Pink Unicorn of the Month is Maca Powder.  I love the smell, I love the taste, I love that it is considered a super food.  To me, its smell is a cross between the essence of three of my favorites:  peanut butter, chocolate, and coffee.  It doesn’t exactly taste like any of those three, nor does it have my favorite food consistency:  smooth and creamy.  But when I open the bag and smell the Maca Powder, it makes me happy. Really happy.

I am looking forward to finding other recipes that include Maca Powder, like trying the Guacamole recipe on the back of the package.  But until then, the most deliciously healthy smoothie I have ever made will have to do.

The full recipe is on the bottom, which is a version tweaked slightly from its original state to fit preferences.  One such example:  My husband prefers a 1 T of Maca Powder smoothie, whereas  I of course feel the more Maca the better, so 2 T is my preference.

This is not a sponsored post, I just wanted to provide the exact ingredients I used.  1 T Hemp Seeds (2 T works as well).  I have used both of the hemp seeds pictured below.  I purchased the Hemp Hearts because I didn’t know what to expect taste-wise and they were a small package available on Google Express.  Once I established that I liked hemp seeds, I moved on to the Carrington Farms 28 oz. package.  They happened to be the only hemp seed option at my Costco.  Any difference in taste between the Hemp Hearts and Carrington Farms brand was undetectable in the smoothie.Hemp Seeds available at Costco images

1 cup of  Sunrise Growers Frozen Organic Antioxidant Fruit Blend, which I purchased at Costco, and is pictured below.Photo Credit: Raisingbyexample.com

1 T Organic Blue Agave Sweetener, also purchased at Costco, as pictured below

Organic Blue Agave1 large handful (which measures out to be about 3 1/2 loosely packed cups) of Earthbound Farms Organic Power Greens, purchased at Costco, pictured below.

1/2 a large banana, sliced and frozen and 1 1/4 cups of water.

Finding Pink Unicorns I love Maca Powder Smoothie Recipe

1 large handful (or 3 1/2 loosely packed Power Greens (Kale, Spinach, etc.)

1/2 large banana, sliced and frozen

1 T Hemp Seeds

2 T Maca Powder

1 cup Frozen Berries

1 T Agave Sweetener

1 1/4 cups of water

I add the ingredients to our VitaMix in the order listed above, then blend, pour into glasses, and enjoy.  Serving Size: 2 (about 12 ounces each).

I hope you love this smoothie too! It is the first healthy smoothie (my husband prefers chocolate and peanut butter to anything green) my husband said he would enjoy having again.  Tiny Win! Pink Unicorn!
